salmon fillets
1 teaspoon olive oil, plus 1 tablespoon
salt and freshly ground black pepper
2 tomatoes, chopped
1 chopped shallot
2 tablespoons fresh lemon juice (optional)
1 teaspoon dried oregano
1 teaspoon dried thyme
( I actually use 2 teaspoons Italian seasoning instead of
oregano and thyme)
Preheat oven to
400 degrees
Sprinkle salmon with olive oil, salt and pepper. Stir the
tomatoes, shallots, tablespoon of oil, lemon juice and
spices in a medium bowl to blend.
Place a salmon fillet, oiled side down, atop a sheet of
foil. Spoon the tomato mixture over the salmon. Fold the
sides of the foil over the fish, covering completely. Seal
foil. Place on baking sheet and bake for about 25 minutes.
