1 2/3 cup cauliflower (grated)
1 green onion
1 clove garlic
1 tablespoon soy sauce
1 egg, beaten
Olive oil
You can add chicken, shrimp or pork if desired

In a flat skillet, heat enough oil to cover the bottom. Fry garlic with diced white part of green onion for approx. 1 minute. Add grated cauliflower and fry for about 4-5 minutes. Add soy sauce and diced green onion tops. Stir to mix. Push mixture to one side of pan. Scramble egg in empty side of pan. Blend in with cauliflower mixture.
